All Vulcans have tails, but, because they give away their emotions, the tails are kept hidden to the point of secrecy. No one on the enterprise (except probably Bones for medical reasons, and maybe Uhura in AOS or Chapel in SNW if you keep their past relationships) knows about Spock's tail - until his shirt rips (and/or he injures it), exposing it to the world. Jim is VERY fascinated.
(Bonus points if Spock needs to keep his tail out for a bit and it has a mind of it's own and keeps reaching out to touch/grab Jim.)

This is niche and kind of art-specific but: you know the scene in Fellowship of the Ring when Boromir gets shot with arrows and Aragorn goes to him while he’s lying there bleeding out and Boromir says, I would have followed you to the end, my brother… my captain… my king…” and Aragorn kisses him tenderly on the forehead? Anyway it’s insanely t’hy’la coded and I would love to see a version of this with Spock as Boromir and Kirk as Aragorn.
Any iteration of our guys (TOS, AOS, SNW, or even mirrorverse) is welcome and wonderful! Prefer this done in a way that fits in the Trek universe rather than a LotR or historic AU, but if you really want to go that way, have at it.

Unconventional animal transformation! (which is to say: no cats and no dogs) The character who doesn't get transformed should NOT know what happened to the other, but it's up to the author whether or not the transformed person retains their memories as an animal. Feel free to make up creatures!
For example: Kirk goes missing. Spock frets. Unrelatedly, a bird has gotten free in the Hydroponics bay. No one knows where it came from, but it seems to like Spock. (Kirk, meanwhile, remembers that The Blue One is a friend, and that something is Missing, but nothing else.)
Or: Spock disappears on a planet. When Kirk goes to search for him, what he finds is a torn science uniform and the paw prints of a beast. He vows revenge. (Meanwhile, Spock, trapped against his will in a new form, has to try to find a way to communicate with Kirk before Kirk unknowingly kills him.)

K/S Arctic/Polar Explorer AU (or not-AU).
That's the prompt. Because I have recently fallen head over heels into "The Terror" (Season 1) and I have also revived my love of Hornblower stories, so the craving for more Age of Sails is strong (I am currently writing a Hornblower K/S myself, which is ofc not going into any part of the Cold Element of this prompt).
And when I say "AU (or not-AU)", I mean: there are hundreds of ways this could go: maybe the classic AU where you drop K/S into a 19th century Royal Navy setting. Or an early 20th century setting. Or something more sci-fi with the expedition taking place on a different planet, but very old school (because modern Star Trek technology is either not available there or is avoided for Prime Directive reasons). Or, and now we are in non-AU territory: maybe this is all part of a time travel adventure? Maybe this is part of the Star Trek arc with all the canonic elements, e.g. a TOS episode or movie? We've seen them in the Wild West before, so why not do an Arctic ep.
I am looking for an authentic Arctic Explorer experience, with all the challenges and troubles and hardships. Maybe your fic is a slice of life from such an AU, giving us a taste what it could be in a full ep. Maybe you go in for the big arc and explore how and why they got there. Maybe you explore how they get out of it alive. If you go the fic route: please include Dr McCoy somehow because I need to see him as grumpy ship's surgeon in such a setting.
This could also inspire some K/S art in Age of Sails uniforms, or Arctic explorer gear. Oh my, I think I'd spontaneously combust seeing Kirk and Spock in such outfits.
Ratings: Teen & Up, Mature, or Explicit. Not necessarily sexual, but the ratings also account for the possibly angsty hardships they might suffer. Both K/S and K&S very welcome. Unresolved sexual tension would be the cherry on top of this cake for me.
DNW: permanent character death. Super-sad ending (ambiguously sad is fine). Extreme violence, unless it is needed for the plot (I am fine with "The Terror" level violence and gore, medical interventions etc.)

Introspective about Kirk always being the first to realise he’s entered a trap, but never realising in time to make a difference, going backwards in time starting in the Daystrom conference room, then Nero destroying the Starfleet ships, and finally Tarsus IV. Maybe Kirk has a higher esper rating than he believes? Culminates in Kirk saving Spock by identifying a trap early and breaking the chain, then kisses.

Suppose Vulcan females gestate the physical bodies, but Vulcan males carry the katras. After a seemingly standard, platonic meld with Kirk, Spock starts having headaches (and strange dreams about a child with blonde hair and pointed ears – but that’s surely incidental). Bones bullies Spock into a med scanner where he finds what looks like an aggressive brain tumour. But Spock knows better: melding with Kirk has accidentally conceived a Vulcan mind… a mind that won’t have a body to enter once it has fully developed and that will kill him if not released. Shenanigans ensue.
Prefer TOS/SNW over AOS, but would be over the moon with any claim.

Turns out the sapients on this planet are HUGE so they are the size of the local bugs. They get trapped, maybe in a tight web or tiny container, and there could be pheromones there to attract the bugs.
Being so close together turns them on and eventually they have to confess their feelings and/or have sex.
Possibly some giant alien is watching and taking notes.

Kirk and Spock have been in a relationship for a while. Kirk has always topped because he just can't put aside his command persona while he's on the ship. He's never been able to put the fact that he's captain out of his mind, even off duty. He feels responsible for everything.
Spock knows that this is a burden to him, so on shore leave he gently convinces Jim to bottom for the very first time. Ideally Jim relaxes and becomes completely passive, happy to take a break from command for once.

This could be following Amok Time for TOS, or if you want to go the SNW route, after Spock and T'Pring agree to separate. Either way, Kirk notices something off and Spock is persuaded to confide in his friend. And Kirk, of course, offers to help him with his predicament. What that help looks like is up to you, but the story should lead somehow to them realising their feelings for/attraction to each other. Sex preferred (but not required)!
